A red wine obtained from Negroamaro and Malvasia grapes hand-picked and fermented in stainless steel macerator tanks at controlled temperature with the addition of selected yeasts. It is red ruby-coloured with purplish nuances with a young fruity aroma and pleasant vinous scent. It is a balanced and harmonious wine, which can perfectly accompany a whole meal. It particularly matches hams, roasted or stewed white and red meat and lightly hot cheese. Best served at 18°C.

TECHNICAL CHARACTERISTICS

  • AGE OF VINEYARDS: 30 – 40 years;
  • SYSTEM OF GROWTH: Short trees from Puglia;
  • VARIETY OF GRAPES: 80% Negroamaro, 10% Malvasia of Lecce, 10% Malvasia Nera;
  • GRAFTING:157 – 140 Ruggeri;
  • NUMBER OF STUMPS PER ACRE: 4.000 – 5.000;
  • AMOUNT OF WINE PER ACRE: 80 Hl;
  • PERIOD OF HARVESTING: First decade of September;
  • PROCESSING OF GRAPES AND FERMENTATION OF MUST:  Maceration for 12/15 days with daily repeated assembly and subsequent pressing of the pomace. Fermentation at a controlled temperature of 25 ° C;
  • REFINING AND AGEING OF THE WINE: The wine is made in stainless steel tanks for 18 months, where it undergoes malolactic fermentation. Will be commercialized only 5-6 months after aging;
  • ANALITICAL DATA: Alcohol 13,50% vol. – Acid total 5,6 – 5,8‰;
  • ORGANIC EXAMINATION: Ruby red more or less intense, vinous, intense, ethereal distinctive, full-bodied, dry, robust but velvety, warm and harmonious;
  • GASTRONOMIC COMBINATIONS: Recommended for strong cheeses, roasts and game. To be served at 18° C.
