Nero di Troia is a red grape varieties most ancient and typical of Puglia north-central and seems to have originated in Asia Minor (Troy) and having arrived in Puglia during the Hellenic colonization.
TECHNICAL CHARACTERISTICS
- AGE OF VINEYARDS: 15 – 30 years;
- SYSTEM OF GROWTH: Tree or espalier;
- VARIETY OF GRAPES: 100% Nero of Troia;
- GRAFTING: 157 – 140 Ruggieri;
- NUMBER OF STUMPS PER ACRE: 4.000 – 4.500;
- AMOUNT OF WINE PER ACRE: 80 – 100 Hl;
- PERIOD OF HARVESTING: First decade of October;
- PROCESSING OF GRAPES AND FERMENTATION OF THE MUST: The extraction of the colour occurs through the maceration of the must with the dregs which then give the must, with the advancing of the fermentation, colouring and scented substances. The separation of the must from the skins occurs by crunching using a slight pressure. The must completes fermentation for about 7 days at a thermo regulated temperature;
- REFINING AND AGEING OF THE WINE: After a few months in cement tanks, the wine is aged in oak barrels of 35 Hl Slavonian. Next in bottle for a period of 3-6 months;
- ANALITICAL DATA: Alcohol 13% vol. – Acid total 5,05‰;
- ORGANIC EXAMINATION: Intense ruby red color with slight orange hues and purple. Clean scents of violet and black fruit. Mildly spicy, touch is full-bodied and tannic set to the softness;
- GASTRONOMIC COMBINATIONS: Pasta with savory sauces, light roasts, poultry, small game, cheese semi-spicy. It should be served at cellar temperature.
