The Aglianico grape has been well known since ancient Greek times. Celebrated by the Latin poet Horace, it is grown on the slopes of Mount Vulture. And this is the origin of the three natural factors determining the constitution and ripening of these grapes. Firstly, the volcanic soil is fertile and rich in particular mineral elements. Then the tufo rock layers, deep down, act as water reservoirs during the drier periods of the year: what the local peasants call “milking the tufo”. Thirdly there is the unique micro-climate. The bunches of fruit are carefully selected and knowledgeably handled; they will yield a strong wine with a notable personality, precious ruby red color and complex aromas.
TECHNICAL CHARACTERISTICS
- AGE OF VINEYARDS: 20 – 30 years;
- SYSTEM OF GROWTH: Tree or espalier simple;
- VARIETY OF GRAPES: 100% Aglianico;
- GRAFTING: 1.103 – 104 Ruggeri;
- NUMBER OF STUMPS PER ACRE: 3.500 – 4.000;
- AMOUNT OF WINE PER ACRE: 50 – 60 Hl;
- PERIOD OF HARVESTING: End of October;
- PROCESSING OF GRAPES AND FERMENTATION OF MUST: Classic red wine method, with destalked grapes, maceration over the skins in stainless steel for 15 days at 25/28° C. during which period mixing and pressing;
- REFINING AND AGEING OF THE WINE: 50% in large Slavonia oak barrels and the remaining 50% in French barriques. Final 12 month;
- ANALITICAL DATA: Alcohol 13,50% vol. – Acid total 5,60 – 6,00‰;
- ORGANIC EXAMINATION: Remarkable bouquet of dark wildberries, with an underlining of liquorice, fenugreek and carob. It is a well structured wine, with highly complex olfactory range;
- GASTRONOMIC COMBINATIONS: Such an important and long lived wine is a perfetc match for substantial food preparations.
