Extremely international vines which in Salentina lands express their best qualities offering excellent structure and elegance. It is best accompanied with vegetable soups, well cooked beans and noble pheasants. To be served at about 18/20°C.
TECHNICAL CHARACTERISTICS
- AGE OF VINEYARDS: 15 – 30 years;
- SYSTEM OF GROWTH: Tree or espalier;
- VARIETY OF GRAPES: 100% Cabernet;
- GRAFTING: 157 – 140 Ruggieri;
- NUMBER OF STUMPS PER ACRE: 4.000 – 4.500;
- AMOUNT OF WINE PER ACRE: 60 Hl;
- PERIOD OF HARVESTING: First decade of October;
- PROCESSING OF GRAPES AND FERMENTATION OF THE MUST: The extraction of the colour occurs through the maceration of the must with the dregs which then give the must, with the advancing of the fermentation, colouring and scented substances. The separation of the must from the skins occurs by crunching using a slight pressure. The must completes fermentation for about 7 days at a thermo regulated temperature;
- REFINING AND AGEING OF THE WINE: Aged in stainless steel tanks for several months, where the malolactic fermentation takes place, Then it continues in stainless steel tanks of small capacity, before being bottled and marketed after 3-4 months after bottling;;
- ANALITICAL DATA: Alcohol 12,50% vol.;
- ORGANIC EXAMINATION: Ruby Red color, smell distinctly vinous, dry, fruity, soft, harmonious, slightly tannic, remarkable for the strength of the structure and elegance of the fruit;
- GASTRONOMIC COMBINATIONS: Pasta with savory sauces, light roasts, poultry, small game, cheese semi-spicy. It should be served at cellar temperature
