Vermentino
Protected Geographical Indication (IGP)
A white wine made from 100% Vermentino grapes grown in Puglia on red, clay and limestone soils. The vineyards, aged between 20 and 35 years, are trained using the traditional bush vine and trellis systems, with yields of 10,000–13,000 kg of grapes per hectare. Winemaking involves destemming and immediate cooling of the crushed grapes to 6–8 °C, followed by 12 hours of maceration, gentle pressing, static settling of the must and alcoholic fermentation at 16–18 °C. The wine is aged on fine lees for 3 months, then stabilised and bottled. It has a straw-yellow colour with greenish reflections. On the nose and palate, it is fruity, elegant and persistent, with a fresh, lingering finish. Ideal with risottos, fish, soft cheeses and white meats. Serve at 10–12 °C.
