Pinot Grigio
Protected Geographical Indication (IGP) – Puglia
A white wine made from 100% Pinot Grigio grapes grown in Puglia on red, clay-rich and calcareous soils. The vineyards are 20–35 years old and are trained using the bush vine and trellis systems, with yields of 10,000–13,000 kg of grapes per hectare. Winemaking involves destemming and immediately cooling the crushed grapes to 6–8 °C, followed by 12 hours of maceration, gentle pressing, static settling of the must and alcoholic fermentation at 16–18 °C. The wine is aged on fine lees for 3 months after separation from the gross lees, followed by stabilisation and bottling. It has a straw-yellow colour with greenish reflections. On the nose and palate, it is fruity, elegant and persistent, with a fresh, lingering palate. Ideal with risotto, fish, soft cheeses and white meats. Serve at 10–12 °C.
