Tanè Nero di Troia
Protected Geographical Indication (IGP)
Red wine obtained from Nero di Troia grapes grown in Puglia on sandy and calcareous-clay soils. The vineyards are between 10 and 20 years old and trained with Guyot pruning (4,000-4,500 vines/ha). Vinification involves destemming and cold maceration at 4-5 °C for 18-36 hours, fermentation at a controlled temperature, racking at the end of fermentation and gentle pressing of the pomace. After malolactic fermentation in stainless steel, the wine matures for 5 months, followed by an additional 6 months in French oak tonneaux and then 3 months in bottle. It has an intense red colour with violet reflections. On the nose it is fruity with sweet spice notes; on the palate it is soft and persistent, with balanced tannins. Ideal with grilled red meats, Mediterranean dishes with meat and cheeses. Serve at 18-20 °C.
