Appassimento Puglia
Protected Geographical Indication (IGP)
Red wine obtained from 30% Primitivo, 30% Negroamaro, 20% Nero di Troia and 20% Merlot grapes grown in Puglia on sandy and calcareous-clay soils. The appassimento process takes place on the vine and in boxes: cutting the fruiting cane interrupts sap flow and the grapes are then placed in boxes for 4-5 weeks. Ageing takes place in stainless steel, followed by 4 months in French oak barriques. Fining is carried out exclusively with plant-based agents. It has an intense red colour with violet reflections. On the nose it offers notes of blackcurrant, blueberry and blackberry with toasted spices; on the palate it is soft, velvety and persistent, with red-fruit jam notes. Ideal with roasted or grilled red meats, baked veal, cured meats and medium-aged cheeses.
